piquant potato salad
6 medium potatoes
3 tbsp olive oil
1 tbsp cider vinegar
1 tsp dry mustard
1 tsp salt
⅛ tsp black pepper
2 hard boiled eggs, chopped
1 cup finely chopped celery
¼ cup chopped red pepper
½ cup chopped green onion
¼ cup sliced kalamata olives
½ cup mayonnaise
- Cook potatoes in boiling salted water for 25-30 minutes
- Mix olive oil, vinegar, mustard, salt and pepper.
- Toss with potatoes and refrigerate.
- In medium bowl mix egg, celery, red pepper, onion, olives and mayo.
- Add to potatos just prior to serving and mix.
This is way better than any pre-made potato salad caca from the supermarket. Trust me.
